Menu Plan 4th ~ 17th August

I picked up the new 4 Ingredients Kids Cookbook last week. OMG so many fantastic recipes in there! Can't wait to try some.

Thurs ~ Baked Spuds with lots of toppings
Fri ~ Chow Mein
Sat ~ Katrina & Amie (from The Block) Nans Chicken & Corn Chowder
Sun - Sausages and veg
Mon~ Roast Chicken
Tues ~ Fish and veg
Wed ~ Special Baked Beans on toast with a poached egg
Thurs ~ Devilled Sausages
Fri ~ Pork Sweet and Sour
Sat ~ Pumpkin Soup with homemade bread
Sun ~ Corned Beef
Mon ~ Baked Drumsticks and roast vegies (might have to look up my KFC recipe I think)
Tues ~ Spaghetti Bolognaise and Garlic Bread
Wed - Quiche and salad

This fortnight I need to use up some weetbix crumbs so I'll be searching the Sanitarium website for some yummy recipes. will be scouring the new 4 Ingredients Kids Cookbook for some inspiration too.

  1. Here is the recipe to my chewy Chocolate Weetbix Slice. This is super yummy amd quick and easy. I quite often double it and freeze half!
    Hope your family enjoy's!
    1 cup brown sugar
    125g unsalted butter, melted
    1 egg, lightly beaten
    1 teaspoon vanilla essence, optional
    2 tablespoons cocoa powder
    1 cup self rasing flour
    ½ cup shredded coconut
    1 cup crushed weet-bix (about 4-5)
    for the topping:
    250g cooking chocolate
    2 tablespoons cream

    Preheat oven to 180°C or 160°C for fan forced. Line a 20cm square slice tin.

    Combine 'slice' ingredients in a bowl. Press into the prepared pan. Bake for 20 minutes. DO NOT OVER COOK OR IT WILL GO HARD! USE TIMER! It does feel soft to touch that is normal!

    Melt chocolate and cream in a bowl over a pan of simmering water. Cook until melted. Pour over warm base and allow to cool. Cut into squares and serve.
