Lemon Pancake Pillows

I love this recipe. It's so easy to make, can make it in stages if that's easier for you.
Reasonably inexpensive too especially if you make your own lemon curd.

A few years ago when I was working in a nursing home, they served a dish just like it. OMG it was yummy! I didn't have a recipe but figured it wasn't too hard to work it out.

Lemon Pancake Pillows
1 Ltr of thick custard
1 C lemon curd
12 crepes

I add an extra heaped dessertspoon of custard powder to my normal custard for this.
This time round I had some yummy homemade lemon butter, but I have used bought stuff before and it's fine.
1Ltr will fill about 12 crepes, but if you don't have that many crepes, you'll have some custard left over with is very yum on strawberries.

Mix the lemon curd into the custard (preferably while the custard is still hot). Cover the top with plastic wrap making sure the plastic wrap touches the surface of the custard. Allow to cool, then chill in the fridge.

Grab a crepe, spoon 1/12th of the custard into the centre of the crepe. Fold in the sides, and then the bottom, and roll folding up the top like you would a spring roll.
Continue with the remaining ingredients.
Place in a greased lasagna dish. You can either chill these and serve them cold with fresh berries, or heat them up in a 180C oven for about 30 mins or so (depending how long they have been chilled for to start with), and serve with cream and/or ice cream.

Make sure the custard is well chilled before filling the crepes or you'll end up in a bit of a mess like I did in the pic above!
