Goal Review for 2013

I have spent the last few days looking over my goals for this year and evaluating them. Some I did well with, others not so much.

Let's have a look shall we.

Simple Living Goals
~ Put my compost scraps into the green recycling bin - nope but I now have a nice bench top compost bin to use
~ Sew napkins - Nope
~ Sew hankies - Nope
~ Grow and use water kefir to aid our health - Tried and didn't like
~ Make some soft cheeses and yoghurt form scratch - Yoghurt yes, cheeses Nope

~ Contact friends more - Hit and miss
~ Spend more 1:1 time with the boys - Hit and miss
~ Don't yell so much - Hit and miss
~ Have fun more - Hit and miss

Kids Development
~ Set aside time each week to work on ABC and 123 development, handwriting skills too - Nope
~ Do one craft activity a week - Nope

~ Keep up with the Zone work - first half of the year wasn't too bad
~ Add pretty touches - Nope

~ Complete boys blankets - Nope
~ Work on kids crafts - Nope
~ Start our blanket - Nope
~ Crochet a jumper for Ethan - Nope
~ Scrapbook one page a week - Nope
~ Sew boys pyjamas and pyjama bags - Nope

~ Walk 5-6 days a week - Hit and miss
~ Strength training 2 times a week - Nope
~ Build our immunity through kefir and other health foods - Getting better

~ Blog 5 days per week - Did well until late May when we went on holidays. Couldn't get back into it after that.

So that doesn't look very successful does it. Oh well. I did accomplish some things.

Tomorrow I'll post my 2014 goals, some of it may seem very familiar :)

reverb13 Day 17: It's your word

 So I've been pretty slack with Reverb13 haven't I?

I was thinking about my One Little Word the other day as I was doing some goal planning for next year the other day.
I decided that I wasn't going to do OLW next year. Decided that I really hadn't done anything the last couple of years so why bother?

Then today while I was reading through some blogs, posts that weren't related to OLW or reverb13 at all One Little Word struck me. I didn't even read the word. It just popped into my head.

I pondered on it for a little while. Then ran an erand, which included a walk with a tantrumming 4yo, and I thought about it some more.

So I thought, why not? Why not have One Little Word. If it just sits there not doing much then what have I lost? Nothing. But if I plan for it then it might just be something fabulous.

What was that one little word you may ask???


My goal for 2014 with my to Nourish mine and my families Mind, Body and Soul.

We all chose a favourite to try. Eli wanted the Spotted cookie, Ethan the Choc Chunk, Randall packed the twin pack of moosli and triple choc fudge, Brian the mooslie and cranberry and white choc. I loved the lemon butter and lime shortbread and the triple choc fudge was soooo yummy.

#reverb13 Day 2: Nourish

Today we are being asked what nourished our soul this year?

For me this would have to be the wonderful Down to Earth community.
Down to Earth is a forum created by the lovely Rhonda Hetzel that is all about Simple Living.
Think green cleaning, repurposing, making and baking from scratch and growing your own.
What I love about this community is the acceptance of who you are, where you're at and where you want to be,
We have all experienced those 'greenies' and 'hippies' who frown upon you if you choose to use disposable nappies or don't make your own bread or heaven forbid you eat meat.
Well Down to Earth isn't like that at all. It's a quiet place where we all have our own expectations of what we would like our life to be like and that is just find by everyone else.
Down to Earth gives me a place where I can chat to likeminded people. People who choose to live similar to myself. People who don't think my fascination for hand crocheted dishcloths and facewashers is at all weird.
Down to Earth is my second home.

Christmas Giveaway!

#reverb13 Day 1: On your first day

This year the lovely Kat contacted me to let me know that Reverb13 was happening. I took part last year but didn't blog everyday.
Seeing as I've been in a blogging slump, I thought I might just give it a go again.

Todays prompt is:
How do you feel, on this first day, in your mind? In your body? In your heart? In your soul?

Right now I have a head cold. So my mind is feeling rather blah. So is my body.
My heart is feeling grateful that Brian has this weekend off to look after the boys while I rest. And woohoo he's just taken them out for a while. Does that mean I'm expected to clean up the mess of a house???

My heart has come to terms with the change in relationship with our teen. He's nearly 18, left school and is working. It's been hard breaking the mummy habit these last few months.
My soul is getting geared up for Christmas, a quiet one this year.

Today is a big day of firsts. First of December is the first day of Summer. Spring is my fave season but I love the lazy days of summer too. Lots of BBQ. Lazy mornings and evenings when school isn't in, and lots of nights spent at the beach.
Today is also the first day of advent. I have made my own reusable advent calendar but totally forgot to but lollies to go in there. Eli has been reminding me the last few days to go get them ooops.
Dec 1st also means that many people start putting up their christmas lights. The boys love going for drives to see the lights at night. We'll have to go soon no doubt.

Tucker Tuesdays ~ Recipe: Homemade Yoghurt from Scratch

I have had an EasiYo yoghurt maker for about 17 years now. I've used it on and off during that time, but do find the sachets so easy to use.
As part of my food and simple living journey I've decided to give away the packets and make mine totally from scratch.
We've been doing that for a few weeks now and we love it. The kids haven't noticed any difference at all either, which all mums I'm sure can appreciate.

You will need your EasiYo container, nearly 1Ltr of UHT milk, about 100g plain greek yoghurt, 1/2 - 1 cup milk powder.

The research I have read says that if you are using fresh milk then it needs to be heated to change the structure of the milk to be made into yoghurt. However if you use UHT milk this is already done. UHT is easy to keep on hand in the cupboard too and cheap.
Your yoghurt must be plain yoghurt. Not flavoured or sweetened and no gelatin.
I buy this little tub and it makes 2 batches. Once you have yours started you will use a little of the previous batch to make the next one, so this is really just a once off. I also choose to use full cream yoghurt as I believe those fats are important, but this will work just as well with low fat yoghurt.
Adding milk powder makes the yoghurt nice and thick. Again I choose to use full cream not skim. Through my experimentation I find 1 cup works best for us. But try 1/2 cup and see how you go. It will be fine, just maybe not quite as thick and creamy.

Add the yoghurt and a little milk to the bottom of the yoghurt pot. 
Put the lid on and give it a shake to mix. 
This will make sure you don't end up with lumps.

It'll look a little like this.

Add your milk powder and enough milk to fill it about half way. Put the lid on and shake again to mix well.

Fill to almost the top with more milk, you won't use all of the litre.
Pop the lid on again and give it a gentle shake to mix.

Fill your EasiYo with boiling water and pop your container in as you normally would.

Pop it in a safe place for about 10 hours, then refrigerate.
I usually do mine in the morning, pop it in the fridge when I go to bed, then it's nice and chilled for the morning.

This is what you'll have once it's set for 10 hours.
A nice thick greek yoghurt to rival those Yoghurt Bars!

If you wish you can add sweetener when you are putting it together.
I usually add the sweetener first and dissolve it in a little hot water. Then add the yoghurt and milk etc.
My boys like it plain though. I can always sweeten with honey as I serve if needed.

This week was our first week back into school routines for quite a few years. I think we did rather well. As suspected Ethan hasn't been eating as much at school as he did at kindy. He's also decided he doesn't want yoghurt or custard in his lunch box and would rather it after school instead.

Lunch Box Planner {free printable}

My 5yo starts school next week. He's one of the last to go through the old termly intake system here in South Australia. Next year there is just one intake.

Needless to say I am back to making school lunches 5 days a week. Been a few years since I've done that. Recent years have seen lunches rather unpopular with the teen.

I like to pack a variety in the boys lunch boxes. I like to have a little bit of section of the 'food pyramid' and don't like to pack the same thing everyday.
Ethan likes a bit of variety too. He did go through a pickled onion and cheese sandwich phase, and while he still likes them, he doesn't want to eat them everyday.

Spent some time perusing Pinterest for a lunch box planner, but nothing suited me, so I've created my own and thought I'd share it with you all.

For Mains there will be a choice of sandwiches, muffin pizzas and meatballs.

Dairy will be custard, rice cream and yoghurt
Fruit will be whatever is in season and if I'm cut short there is always canned fruit
Veg the boys like cuccumber sticks and I'm hoping to encourage some other veg too
I have a selection of sweet and savoury baking items in the freezer ready to go and I'll be trying a variety of healthy crackers.

~ Apple Pie Chia Pudding

I also got back into making yoghurt and made a batch of lemon cordial now the weather is warming up from the juice I froze a few months back.

{Recipe} Apple Pie Chia Pudding

Chia Puddings have been doing the rounds for a while now. Chia seeds are sooooo good for you. Despite their desserty nature they are healthy enough for breakfast! Fabulous way to start the day with a bunch full of Omega 3's, protein, calcium and fibre {and lots lots more}!

We enjoy making the Coconut Milk Chocolate Pudding but thought we'd try something a little different this time.

This recipe will thicken in a few hours, but I always find it best to do the night before, or at least in the morning for dessert that night.

Apple Pie Chia Pudding
1 1/2C milk {choose your poison by I used full cream cows milk}
1/2C chia seeds {makes it really thick, could possibly get away with about 1/3C though}
2-4 Tablespoons Apple Juice Concentrate {this adds the apple flavour so don't skimp on it}
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Mix ingredients all together in a bowl until well combined.
Pop in the fridge for it to thicken up.
Give it a stir a few times as it thicken to evenly distribute the chia seeds.
It's beautiful when served with a nice dollop of cream for extra good fats.
Grate in some apple just before serving for extra appley goodness.

Ethan's Celebration Cake

This week my Dad came to visit us for a couple of days. We haven't seen him for over a year and was lovely to have him here for a while rather than just a flying visit on his way through.
Ethan has his last day of kindy and his party lunch where I took a plate of puzzle ham and cheese sandwiches.

~ Ethan wanted to bake a cake to celebrate finishing kindy. We just used a Betty Crocker mix that I had bought on a super special for $1.99. We decorated with strawberries.
~ We enjoyed some plain and sultana scones yesterday for afternoon tea with the in laws. My homemade strawberry jam was perfect to have with it.

This week I got wind of a dishcloth swap over at One Crafty Mumma. I got to work straight away on my contribution. I had seen cloths similar to these going around the net but couldn't find a pattern. So I winged it and made one up myself.

I just love these. So nice and bright after such a dull dreary winter.

Eli's Dump Truck Cake

I can't believe that it's monday again. Seriously, where is the time going?

This week saw our baby turn 4! We had a small gathering of close family for cake.
I baked 2 Frugal Mud Cakes, broke them up. mixed with a little Betty Crocker Choc Frosting, stuck in a few sour worms, sprinkled over some candy rocks and milo. Easy peasy and he loved it!

This weeks menu plan has been rather relaxed. It's Brians week of nights so we've had some easy meals.
I also bought a dozen punnets of strawberries at 2 for $1.60 and made my first batch of jam!!!

Tues ~ Hot Dogs
Wed ~ Sausages and veg
Thurs ~ Surf n turf
Fri ~ Chicken snitzels and veg
Sat ~ Homemade Pizza and Garlic bread
Sun ~ Roast Beef

~ Strawberry Jam
~ Condensed milk cookies - made jam and lemon/orange curd drops, sultana and cornflake cookies and melting moments

Tucker Tuesday ~ Recipe: Hearty French Onion Chicken Casserole

French Onion Chicken Casserole

This is one of my favourite chicken casseroles. Fabulous in the middle of winter when you need a good rib sticking meal.
I usually make double this so I can put some dinners aside for Brian for work. It reheats really well.
It can be made in the oven or in the slow cooker too.

French Onion Chicken Casserole
1kg chicken pieces
1 pkt french onion soup mix (or make your own)
2T plain flour
2T oil
1 onion, diced or sliced
3 rashers bacon, sliced
100g mushrooms, sliced
1 1/4 C water (1C for slow cooker)
2T sour cream (optional)

Combine the soup mix and flour in a large bag.
Toss chicken pieces in the seasoned flour until coated. Reserve the flour.
Heat oil in a frying pan and brown the chicken

Place the chicken in casserole/slow cooker.
Fry off the bacon, onion and mushrooms for a couple of minutes in the same frying pan.
Spoon over the top of the chicken.
Combine the remaining flour and water and pour over.
Cover and bake. Traditional oven 180C for 90 mins or so, or slow cooker High for 4-5 hours, Low for 7-8.
Stir in the sour cream, if using, and serve with lots of vegies.

Starting to look forward summer meals and BBQ's again.

Fri ~ French Onion Chicken Casserole
Sat ~ Steak Burgers
Sun ~ Roast lamb and lots of veg for Fathers Day

I didn't bake anything at all this week. For dessert we had cake from the freezer and a milo, then last night I made an apple crumble for Fathers Day.

The start of this week was rather productive. I was feeling really good and felt like being in the kitchen. Then my cold relapsed. Dr seems to think we have a milk case of whooping cough :(

Lately I've been feeling much more Foodie like. I haven't felt like that in a long time. I'm actually inspired by food again and it's wonderful!

I tried my hand at something new this week. Well something I tried once and it failed but thanks to this new found inspiration I was willing to go again. I made a vegetarian lasagna and it was delicious!

Brian and the boys making his famous Bread and Butter Pud, no recipe sorry, just something he wings every time.

This last week was almost a write off. We all ended up with gastro, so the menu plan went out the window for the most part. Then the rest of the week was shuffled around. But that's the beauty of having a plan, it can be flexible.

Tucker Tuesday ~ Recipe: Honey Crackles

Honey Crackles, or Honey Joys as they are also known as, are one of those childhood treats that I haven't made in years!
Brian mentioned about making them the other week and I made a mental note to do so. Then Eli had his surgery and my focus was on that.
The other day Eli saw them being made on Play School so I wrote down cornflakes on the shopping list for later that week.
We made them yesterday. The boys had lots of fun stirring and then carefully pouring the mix into some cute little dinosaur cupcake wrappers my mum picked up somewhere for the boys.
Unfortunately the kids weren't that interested in them once they came out of the oven. Oh well more for the rest of us!

Honey Crackles
4C cornflakes
100g butter
1/4C sugar
1T honey

Preheat your oven to 180C.
Melt the butter, sugar and honey in a small saucepan over a medium heat until melted and the sugar is dissolved.
In a larger bowl have the cornflakes ready and then pour over the melted mix.
Sir the cornflakes gentle until all the flakes are coated in the honey buttery goodness.
Spoon into about 24 small cupcake wrappers. Not the mini ones, but not the big ones either.
Pop them into the oven and bake for about 10 minutes. Allow to cool.

Wed ~ Pumpkin soup and homemade bread
Thurs ~ Meat pies and veg
Fri ~ Fresh fish and chips

~ Rich Butter Cake (made into a marble cake)

~ Jude's Microwave Jam Puddings
~ Butterscotch Self Saucing Pudding
~ Creamed Rice
~ Apricot slice and custard

Probably other things I baked and made for dessert but I didn't write them down and with this head cold I currently I have I don't remember either :)
