Tucker Tuesdays ~ Recipe: Cheap Chow Mein

We love Chow Mein in our house. Such a cheap meal that you can bulk out as much as you like. Quick to cook too!

Becci's Cheap Chow Mein
1 onion, chopped
500g beef mince
1-2T curry powder, or to taste
1/4-1/2 cabbage, shredded
2 carrots, thinly sliced
1 400g can pineapple pieces in juice, drained, with juice reserved
1 pkt chicken noodle soup mix, or a couple of teaspoons of chicken stock powder
Rice or noodles to serve

In a large fry pan (I use our electric wok) brown off the onion and mince.
Add curry powder and fry off for a minute or two.
Add the vegies and cook for another minute or two.
Add the pineapple, juice and soup mix. Stir through, pop the lid on and allow too cook for a couple of minutes.
Add rice or noodles (we love hokkien noodles but rice is much cheaper) and serve.

  1. I cooked chow mein yesterday we had it with my whippy mashed potatoes and we had leftovers on toast. My Hubby says it tastes better on the second day. - Chantell
