Tucker Tuesday ~ Recipe: Potato Bake

Potato Bake is one of our family fave side dishes. It's pretty quick to whip up and this one doesn't contain any processed packets of soup that contain lots of numbers :)

All you need is:
Enough spuds to fill your dish - will depend on how many you are feeding.
An onion, diced
About 4 rashers of bacon, diced
300ml carton of cream
1cup or so of grated cheese

I like to par cook my onion. I've found it sometimes doesn't cook well otherwise and I can't stand crunchy onion.
So I pop it, and the bacon, in a microwave container, with a lid, and heat on high for about 3 minutes.
Mean while slice your spuds. I leave the skin on, extra nutrients and all that. Layer in a casserole or lasagna dish.
Top with bacon and onion mix.
I then pour the cream over. I find if I add the cream after I have added the cheese it tends to sit on top more and not work it's way through the spuds.
Top with grated cheese.
Bake on about 180C for about 90 mins or until nice and golden and the potatoes are tender when pricked with a fork.
If it's browning too early pop a lid or some alfoil on top.

Menu Planning Monday!


I was so excited to find a leg of lamb at the local IGA last shopping fortnight for $15! We love lamb here and have been wanting a roast lamb for so long but they are just too expensive for our budget. Normally they are at least $10 more. Gone are the days when I could get a whole lamb for $25!

Haven't done much baking this week though. Was lots left over from last week and I came down with a virus for a day or two too.

Mon ~ Swedish Meatballs and veg
Tues ~ Fried Chicken and veg
Wed ~ Hot Dog Savouries - with bacon and onion added
Thurs ~ Steak, chips and veg with mushroom gravy
Fri ~ Chicken wings and veg {I was ill in bed so Brian cooked}
Sat ~ Roast Lamb and all the trimmings
Sun ~ Lamb Chop Casserole

Baking:
Apple {home stewed} and Raspberry Crumble with custard

Tucker Tuesdays ~ Nut free Date Balls

I have made these Date balls a couple of times and the kids just love them. Super sweet but full of everything good.
I make mine nut free so that Ethan can take them to kindy (nut free zone) but if you need or like nuts feel free to add them.
I love the fact that this is an any thing goes kinda recipe too.

I put about a cup of pitted dates, still whole, and a cup of sultanas into a saucepan then just cover with water.
Use whatever fruit you like but use dates as a base.

Bring to the boil and simmer until the liquid has evaporated.

You can fork mash the cooked dates and fruit but I find the sultanas don't mash up well so I blitz them in the food processor for a bit.

Add whatever other goodies you like.
I added chia seeds, quinoa flakes and some rolled oats I processes a little.
The date and fruit mix is rather soft so you want to add things to firm it up a little.
Next time I'll add some coconut oil too I think.
Leave to cool for a while, it'll firm up a bit then too.

Roll teaspoonfuls into balls and roll into coconut.
Store in the fridge for up to a week, but they may not last that long, they are sooooo yummy!

Menu Planning Monday!

{Potato Bake}

I tried a new recipe for Pork Chops in the slow cooker this week. The marinade was nice enough, the chops tender, but they were dry. Might just use the marinade and then cook as usual I think.

I'm back in the baking mood too :)

Mon ~ Savoury mince and rice
Tues ~ Curried Sausages
Wed ~ Take away pizza (trip to town all day)
Thurs ~ Asian Omelettes
Fri ~ Slow Cooked Pork Chops
Sat ~ Marinated Drumsticks, Potato Bake and steamed veg
Sun ~ Corned Beef, veg and onion sauce for St Pat's Day.

Baking:
~ Custard Poke Cake
~ Blueberry Breakfast Slice (except I used raspberries)
~ Blackberry and Muesli Muffins
~ Coconut Sweetened Condensed Milk (will be turned into condensed milk cookies later in the week.

Tucker Tuesday: Recipe ~ Coconut Milk Chocolate Mousse

I had heard of this scrummy mousse that you can make from coconut milk which is soooo good for you.
It's so easy too and sooo yummy! I am not a big coconut fan either but I couldn't taste one bit of the coconut milk! Might have something to do with the fact that I accidentally added twice as much cocoa as I was meant to though ooops. Below are the correct quantities :)

I only had coconut cream in the pantry so I chilled it for about 5 hours and then whipped it up. There is no water in coconut cream, unlike milk, so I didn't have to drain that off and the cream didn't go solid like the milk is meant to, but it still worked. The cream gave it more of a pudding type texture too.

Coconut Milk Chocolate Mousse
1 can coconut milk or cream
1/4 C plus 1 tablespoon cocoa
1/2 t vanilla
sweetener to taste

Chill the milk until solid, drain off the water and use in another recipe. Or id using cream chill for a few hours.
Whip the milk or cream for a couple of minutes. Add in your sweetener and vanilla. I used about 1/4C honey or there abouts. Whip for a minute. Add the cocoa a little at a time until incorporated. It will thicken a fair bit when the cocoa is added.
Pour into dishes and refrigerate. Easy peasy!!

Menu Planning Monday

{Nanna's BBQ Pattie Hamburgers}

This week had been rather warm and very humid. Temperature only sitting around the 30C mark, but feeling much hotter due to the humidity. Very unusual weather for March. Technically it's Autumn!
We have hot weather again for the next three days then some respite for the few after that. I really hope that that is the end of it. I am craving some cooler weather.
I don't mind summer but it really annoys me in the cooking department.
Luckily my plan for the last week didn't really get messed up at all.

Mon ~ Corned Beef and veg with onion sauce
Tues ~ Chicken snitzels and veg
Wed ~ Nannas BBQ Pattie Hamburgers
Thurs ~ Marinated Chicken pieces and veg
Fri ~ Spaghetti Bolognaise {was meant to me spaghetti and meatballs but I had a busy day sorting out the kitchen}
Sat ~ Bacon, eggs and chips {was meant to be quiche and chips but too hot to have the oven going}
Sun ~ Roast Chicken and veg {finally a slightly cooler day!}

Baking:
No baking done due to the heat but I did make an awesome chocolate mousse from coconut milk that I will blog about tomorrow. My new addiction :)

Kitchen repairs and reorganisation

A couple of weeks ago I noticed that the shelf under the sink was rather wonky.
Turns out there was a leak in the wall at the breach which was dripping down to the waste pipe and then onto the old chipboard shelves.
Bear in mind that this house is 30 years old and we are renting.
Plumbers came and fixed the pipes. We even got a new mixer tap and separate rain water tap as they don't make that kind of breach any more.
Yesterday the handyman came to replace the shelf.

Shelf was just a tad wonky.

Fortunately they replaced it with a nice melamine shelf. Much easier to keep clean.
I took the opportunity to finally clean out my plastics corner seeing as everything was cleaned out anyways.

Not the most perfect shelves. But much better than it was. The horrible mouldy smell has almost gone too.
Have a box of bicarb soaking up the last of the odour.
Was great to organised the cupboard too. Got rid of a few things from there that haven't been used in ages too.

Hand Crocheted Sale

Something a little different from me this week.
I have been spending every spare minute over the last few weeks preparing to relaunch my craft page Lime Tree Creations.
For health reasons I have decided to change what I was previously creating and am now offering hand crocheted facewashers and dishcloths! All items are hand crocheted by me using 100% cotton. Just perfect for yourself or the babies in the family.
More items will be added over the next few months.

Tucker Tuesday ~ Garlic Bread Pasta aka Pasta Alfredo

Pasta Alfredo is a wonderful quick easy and wholesome meal.
I found that if I called this Pasta Alfredo the kids don't like it much. But if it's called Garlic Bread Pasta (as the LOVE garlic bread) then they come back for seconds!
I have decided to go with my instincts more when it comes to food. I have always though that it was best to eat real food rather than packet stuff that has been tampered too much. Surely that stuff can't be good for you. So cream and butter it is!

Pasta Alfredo
500g dried pasta, or make your own, even better!
50g-ish butter
Good tablespoon of garlic, or to taste
300ml carton of cream
100g freshly grated parmesan

Cook your pasta in plenty of salted boiling water.
While it's cooking melt the butter in a small fry pan.
Add the garlic and cook a couple of minutes.
Pour in the cream. Allow to simmer for a few minutes til it thickens a bit.
Add 3/4 of the parmesan and melt through.
Toss through your cooked and drained pasta.
Serve topped with more parmesan.

Now you can add some fresh chopped herbs if you like. Some peas, sliced spring onions, sliced cooked chicken breast, bacon, capsicum, mushie, or whatever takes your fancy if you like.

What I like is that at the end of a long day this takes just a few minutes to whip together and it's easy. No chopping tonnes of different things, heat and eat type stuff!

Menu Planning Monday

This week I finally managed to get some baking done!! I have some very healthy snacks in the freezer for the kids lunch boxes and some not so healthy snacks for us to eat.

This weeks menu looked like this:

Mon ~ Hot Ham and Cheese Rolls
Tues ~ Homemade Mac n Cheese
Wed ~ Roast Pork and veg
Thurs ~ Pasta Alfredo
Fri ~ Asian Inspired Omelettes
Sat ~ Swedish Meatballs {new recipe - delish}
Sun ~ leftover meatballs

Baking:
Jam Crumble Slice {recipe from a friend}
Homemade Wheat Thins {yummy but will be playing with this recipe}
Oatmeal Banana Breakfast Muffins {I added lots of goodness to this recipe too}
Healthy Banana Oatmeal Cups {I played with this recipe too}

Just occurred to me that I tweaked nearly every recipe I baked this weekend.
I reduce the amount of sugar in the first two recipes.
I didn't do anything to the Wheat Thins but plan to add some other flavours to the recipe next time.
I reduced the amount of oats by half a cup in the breakfast muffins and replaced it with linseed meal.
I switched out half the oats for quinoa flakes in the Banana Oatmeal Cups and added craisins instead of choc chips.

Healthy Breakfast

I made this healthy breakfast for the boys this morning.
Could easily be a healthy snack for afternoon tea or even dessert too.
I toasted an english muffin (only had white in the freezer), spread it with cottage cheese (could use cream cheese if you prefer, my boys love cottage cheese), drizzled with a little honey and topped with sliced strawberries.
Amazingly they ate it as it was. I expected them to pick the strawberries off first and then eat the bottom.
