Menu Planning Mondays Catch Up Post and Link Up!

I totally forgot to post last weeks menu plan! Not sure what happened there.
Anyways here is our menu plan from the last fortnight.

Mon ~ Spaghetti Bolognaise Pasta Bake
Tues ~ Easy dinner
Wed ~ Beef Casserole
Thurs ~ Hot Dogs
Fri ~ Fried Chicken and oven chips
Sat ~ Yumbos
Sun ~ Breakfast for Dinner

Mon ~ Roast Chicken and veg
Tues ~ Easy dinner because we ate out for lunch
Wed ~ Devilled Sausages and veg
Thurs ~ Chicken fried rice
Fri ~ Chinese takeaway
Sat ~ Rissoles and veg
Sun ~ Takeaway after a family day out

Baking:
~ Savoury crackers (this recipe with some added herbs etc)
~ Banana muffins
~ Wholemeal apple and sultana cake slice

Desserts:
~ Apple and Blackberry cobbler

Menu Planning Mondays Link Up!

Brian and the boys making his famous Bread and Butter Pud, no recipe sorry, just something he wings every time.

This last week was almost a write off. We all ended up with gastro, so the menu plan went out the window for the most part. Then the rest of the week was shuffled around. But that's the beauty of having a plan, it can be flexible.

Mon ~ Sick
Tues ~ Marinated thigh fillets and steamed veg
Wed ~ Chicken past bake
Thurs ~ Chicken, bacon and mushroom casserole
Fri ~ Steak and veg
Sat ~ Homemade Pizza
Sun ~ Roast lamb and veg

Baking:
~ Hot Milk Cake
~ Date and Oat Slice

Dessert:
~ Bread and Butter Pudding

Tucker Tuesday ~ Recipe: Honey Crackles

Honey Crackles, or Honey Joys as they are also known as, are one of those childhood treats that I haven't made in years!
Brian mentioned about making them the other week and I made a mental note to do so. Then Eli had his surgery and my focus was on that.
The other day Eli saw them being made on Play School so I wrote down cornflakes on the shopping list for later that week.
We made them yesterday. The boys had lots of fun stirring and then carefully pouring the mix into some cute little dinosaur cupcake wrappers my mum picked up somewhere for the boys.
Unfortunately the kids weren't that interested in them once they came out of the oven. Oh well more for the rest of us!

Honey Crackles
4C cornflakes
100g butter
1/4C sugar
1T honey

Preheat your oven to 180C.
Melt the butter, sugar and honey in a small saucepan over a medium heat until melted and the sugar is dissolved.
In a larger bowl have the cornflakes ready and then pour over the melted mix.
Sir the cornflakes gentle until all the flakes are coated in the honey buttery goodness.
Spoon into about 24 small cupcake wrappers. Not the mini ones, but not the big ones either.
Pop them into the oven and bake for about 10 minutes. Allow to cool.

Menu Planning Mondays!


Last Monday Eli had to go to hospital for a minor operation and I didn't get organised to put up our menu plan, so this week is a double :)

Mon ~ Roast Pork, lots of veg, gravy made from the juices
Tues ~ Sausages and veg
Wed ~ Roast lamb chops and veg
Thurs ~ Apricot Chicken and veg
Fri ~ Stroganoff meatballs and veg
Sat ~ Crumbed fish and veg with white sauce
Sun ~ Corned Beef, veg and white sauce

Mon ~ Spaghetti Bolognaise
Tues ~ Chicken snitzels and veg with Diane sauce
Wed ~ Pumpkin soup and homemade bread
Thurs ~ Meat pies and veg
Fri ~ Fresh fish and chips
Sun ~ Roast Pork and veg

Baking:
~ Honey Crackles
~ Rich Butter Cake (made into a marble cake)


Desserts:
~ Jude's Microwave Jam Puddings
~ Butterscotch Self Saucing Pudding
~ Creamed Rice
~ Apricot slice and custard

Probably other things I baked and made for dessert but I didn't write them down and with this head cold I currently I have I don't remember either :)
