Menu Planning Mondays Link Up!

Sugar free Banana and Date Spelt Muffins

This week was our first week back into school routines for quite a few years. I think we did rather well. As suspected Ethan hasn't been eating as much at school as he did at kindy. He's also decided he doesn't want yoghurt or custard in his lunch box and would rather it after school instead.

Mon ~ Roast Pork and veg
Tues ~ Homemade Chicken snitzels and veg
Wed ~ Slow Cooked Beef Casserole
Thurs ~ Out for lunch so just chicken wings for dinner
Fri ~ Spaghetti Bolognaise
Sat ~ Fried Rice (was meant to have thurs night)
Sun ~ Roast lamb and veg

Baking:
A lovely friend invited me to make a recipe of hers and photograph for her blog. They were a massive hit. They haven't been blogged yet but you can check out her other Wholesome recipes here.

Lunch Box Planner {free printable}

My 5yo starts school next week. He's one of the last to go through the old termly intake system here in South Australia. Next year there is just one intake.

Needless to say I am back to making school lunches 5 days a week. Been a few years since I've done that. Recent years have seen lunches rather unpopular with the teen.

I like to pack a variety in the boys lunch boxes. I like to have a little bit of section of the 'food pyramid' and don't like to pack the same thing everyday.
Ethan likes a bit of variety too. He did go through a pickled onion and cheese sandwich phase, and while he still likes them, he doesn't want to eat them everyday.

Spent some time perusing Pinterest for a lunch box planner, but nothing suited me, so I've created my own and thought I'd share it with you all.

For Mains there will be a choice of sandwiches, muffin pizzas and meatballs.

Dairy will be custard, rice cream and yoghurt
Fruit will be whatever is in season and if I'm cut short there is always canned fruit
Veg the boys like cuccumber sticks and I'm hoping to encourage some other veg too
I have a selection of sweet and savoury baking items in the freezer ready to go and I'll be trying a variety of healthy crackers.

Menu Planning Mondays Link Up!

This week I tried a different way to make Garlic Bread. It worked quite well but needs a little tweaking before I share the recipe

Mon ~ Pastitsio and Garlic Bread
Tues ~ Leftover Pastitsio
Wed ~ Easy dinner
Thurs ~ Hot Dogs
Fri ~ Grilled steak, potato bake, veg and mushie sauce
Sat ~ Fish and veg
Sun ~ Homemade Pizza

Baking:
This week I did a bit of bake to school baking for the freezer.
~ Muffin Pizzas
~ Mini Quiche
~ Mini  Meatballs
~ Apple Pie Chia Pudding

I also got back into making yoghurt and made a batch of lemon cordial now the weather is warming up from the juice I froze a few months back.

{Recipe} Apple Pie Chia Pudding

Chia Puddings have been doing the rounds for a while now. Chia seeds are sooooo good for you. Despite their desserty nature they are healthy enough for breakfast! Fabulous way to start the day with a bunch full of Omega 3's, protein, calcium and fibre {and lots lots more}!

We enjoy making the Coconut Milk Chocolate Pudding but thought we'd try something a little different this time.

This recipe will thicken in a few hours, but I always find it best to do the night before, or at least in the morning for dessert that night.


Apple Pie Chia Pudding
1 1/2C milk {choose your poison by I used full cream cows milk}
1/2C chia seeds {makes it really thick, could possibly get away with about 1/3C though}
2-4 Tablespoons Apple Juice Concentrate {this adds the apple flavour so don't skimp on it}
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Mix ingredients all together in a bowl until well combined.
Pop in the fridge for it to thicken up.
Give it a stir a few times as it thicken to evenly distribute the chia seeds.
It's beautiful when served with a nice dollop of cream for extra good fats.
Grate in some apple just before serving for extra appley goodness.
